So, my muffin fail isn’t a complete fail. They are REALLY delicious, full of fiber, super moist, and they have an awesome spice pallet. I did do some modifications, and they did not rise. They are completely flat. You can find the original recipe on All Recipes here. I did do some pretty drastic modifications, because I got lazy and the internet was not pulling up exactly what I wanted. I wanted pumpkin, I wanted oatmeal, I wanted flax, and I wanted coffee. I know – picky picky picky!
I love Asian fusion, I love all the flavours, the depth and spice. One thing that you need for a good fresh roll, or a good noodle bowl is a delicious peanut sauce! I have tried recipe after recipe of peanut sauce and this one is exactly what I want. Since finding it I’ve tried a few other peanut sauces and nothing compares to this and nothing in the store (that I was able to find) compares either. Some of you may also be interested to know – it’s peanut free and incredibly easy!
I am so excited to tell you about my latest recipe added to my rotation. Zucchini Couscous Lasagna Casserole! Yum! I based it off of a recipe from Recipies.com but the sauce needed a little something so I improvised. Also, I really like Israeli couscous as opposed to the ground up bits, so I modified it to accommodate that as well.
