Pumpkin Spice Muffin Fail

Muffin, oatmeal, flax, flat, no rise, baking modificationsSo, my muffin fail isn’t a complete fail. They are REALLY delicious, full of fiber, super moist, and they have an awesome spice pallet. I did do some modifications, and they did not rise. They are completely flat. You can find the original recipe on All Recipes here. I did do some pretty drastic modifications, because I  got lazy and the internet was not pulling up exactly what I wanted. I wanted pumpkin, I wanted oatmeal, I wanted flax, and I wanted coffee. I know – picky picky picky!

The Best Homemade Peanut Sauce

peanut sauce, asian peanut sauce, peanut free, tahini peanut sauce, foodie

I love Asian fusion, I love all the flavours, the depth and spice. One thing that you need for a good fresh roll, or a good noodle bowl is a delicious peanut sauce! I have tried recipe after recipe of peanut sauce and this one is exactly what I want. Since finding it I’ve tried a few other peanut sauces and nothing compares to this and nothing in the store (that I was able to find) compares either. Some of you may also be interested to know – it’s peanut free and incredibly easy!

Zucchini Couscous Lasagna Casserole

Zucchini, Couscous, Lasagna, Casserole, ground beef, beef, Parmesan, tomato, tomato sauce, chipotle

I am so excited to tell you about my latest recipe added to my rotation.  Zucchini Couscous Lasagna Casserole! Yum! I based it off of a recipe from Recipies.com but the sauce needed a little something so I improvised. Also, I really like Israeli couscous as opposed to the ground up bits, so I modified it to accommodate that as well.

My Breakfast Shake “Recipe”

I was recently trying to describe the basics of my breakfast shake to a friend and I realized its more complicated than I thought. I have gotten so used to it since I’ve been making it every morning for the last 3 or 4 years. So the easiest way for me to share it with her, is to also share it with you!

Low Fat Taco Mac and Cheese Entrée

Low Fat Taco Mac and Cheese Entrée | leave it to Joy

I love mac n cheese, but all that work for a side? Not this time! I’ve adapted Betty Crocker’s Mac and Cheese so that it’s an entree. Lean ground turkey as our protein and mexican taco spices make this side into a full entree – and its lean (if you want).

Easy Delicious Home-made Bread

Best Home-made Bread | leave it to Joy

About a month ago I stopped buying bread and transitioned to home-made. The first time I made bread was because my grocer was doing renovations and didn’t have the in-store baked bread available; and all those breads that are shipped in have weird ingredients that I can’t pronounce. Now I make the time so that we are eating real ingredients. I’ve morphed 2 recipes: my friend’s Grandma’s & Betty Crocker’s Classic White Bread. There are only 2 of us so I only make 1 loaf and it lasts us about a week or so.  I do own a bread maker – but I don’t like the bread that comes out of that, its so dense! I assumed that it would be complicated to make bread by hand. If my machine couldn’t get it right, how could I? But this bread is easy and amazing! If I can do it, you can too!
